Muffin Frittatas

These flavorful frittatas can be made ahead; just reheat in the microwave for a quick breakfast, snack or appetizer.

  • 6 Eggs
  • 1/2 cup Milk
  • 1/4 tsp. Salt
  • 1/8 tsp. Pepper
  • 1 cup (4 oz.) Cheddar cheese
  • 3/4 cup Zucchini
  • 1/4 cup Red bell pepper
  • 2 Tbsp. Red onion
  1. Step 1 HEAT oven to 350°F.
  2. BEAT eggs, milk, salt and pepper in medium bowl until blended.
  3. ADD cheese, zucchini, bell pepper and onion; mix well.
  4. SPOON evenly into 12 greased muffin cups, about 1/4 cup each.Step 2 BAKE in 350°F oven until just set, 20 to 22 minutes.
  5. COOL on rack 5 minutes.
  6. REMOVE from cups; serve warm..
