Microwave Egg, Canadian Bacon & Cheese Muffin

This quick and easy microwave scrambled egg and Canadian bacon muffin is an excellent source of protein. Top with fresh tomato and avocado slices.

  • 1 slice Canadian bacon or thin slice deli ham
  • 1 Egg
  • Cheddar cheese
  • 1 Wheat English muffin
  1. Step 1 LINE the bottom of 8-oz.
  2. ramekin or custard cup with Canadian bacon, if using ham it may be necessary to fold the slice in half.
  3. POUR egg over Canadian bacon.Step 2 MICROWAVE on HIGH 30 seconds; stir.
  4. MICROWAVE until egg is almost set, 15 to 30 seconds longer.
  5. SEASON with salt and pepper, if desired.Step 3 TOP with cheese.
  6. SERVE on English muffin..
